In 2019, I found myself asking a question I never thought I would say: "What if I started a cattle ranch?" Having been born and raised in a city my entire life, I never would have imagined that I would go on to start my own fully functional ranch and beef delivery startup. As an immigrant from the Philippines and a wall street guy, my father would have been so surprised to see me working on a farm. Unfortunately when I was only 14 years old, he passed away from a triple heart attack. While his passing was difficult on me and my two younger brothers, it catalyzed my interest in studying the effects of urbanization on health and food as an instrument of wellbeing. Lured by rural America's rugged individualism, I knew that starting the cattle ranch was my opportunity. I was determined to write my own story and continue the legacy my father had left me. Often running out of daylight while working on the farm, I worked up to 12 hours a day for weeks at a time, even during snow or extreme heat. From learning to load cows onto a homemade trailer to installing two miles of barbed wire fences, these jobs were a far cry from city living. In the evenings, I returned to the farmhouse exhausted
